German Chocolate Cupcakes with Coconut Pecan Frosting

I love German Chocolate Cake!
It is my All time favorite.  I love to make German Chocolate Cupcakes for portion control......  
Other wise I could eat the whole cake myself.
As I have mentioned before I love cake mixes.  Canned frosting.... Not so much.  
Follow the directions on the cake mix.  While the  cupcakes cooling, Lets start the Yummy Frosting!
This frosting is fairly easy to make and well worth the time!
Combine sugar, evaporated milk, egg yokes, butter and vanilla in a sauce pan.
 Cook and stir constantly over low heat for about 10 minutes or until sauce thickens.
Do not boil!

remove from heat and add coconut flakes and chopped pecans.
Don't throw those egg whites away.  Why not beat them until they are fluffy and fold them into Buttermilk Pancakes.




Coconut Pecan Frosting

1 cup sugar
1 cup evaporated milk
3 egg yokes
1/2 cup butter
1 tsp vanilla
2 1/2 cups coconut flakes
1 cup chopped pecans


Cook and stir constantly over low heat. Cook for about 10 minutes or until mixture thickens.  Do not boil.
remove from heat and add Coconut and chopped pecans.  When frosting has cooked.  Frost cupcakes and Enjoy!

Snickerdoodle Cupcakes


I made the most AMAZING cupcakes today!! I could eat the cake part by itself without frosting. Today we are celebrating my friend's birthday. It's a Mexican themed potluck...I kept wondering what I should bring. I thought about making Churros but I ruled that out because it would be too much work (not saying you aren't worth the work Marlene!!) So then I thought well I could make snickerdoodles since they have the same flavor profile and then I thought about cupcakes and making a snickerdoodle cupcake. I googled recipes and combined a couple together. I seriously can't believe how yummy these turned out!!

Cream together butter, sugars, sour cream, vanilla, eggs and spices. Add Baking Powder and flour and mix until combined

Pour batter in cupcake papers and bake for 22 minutes at 350 degrees. Set cupcakes on a paper towel to cool

Frost with Cream Cheese Frosting and sprinkle with cinnamon & sugar

Snickerdoodle Cupcakes
1 Cup Butter
1 Cup White Sugar
1 Cup Brown Sugar
1 tbs Vanilla!!
1 Cup Sour Cream
3 Tea Cinnamon
1 Tea Ginger
1/2 tea Nutmeg
2 tea Baking Powder
2 Cups Flour

Cream together butter, sugars, sour cream, vanilla, eggs and spices. Add Baking Powder and flour and mix until combined. Pour batter in cupcake papers and bake for 22 minutes at 350 degrees

Red Velvet Cupcakes


My kids school was doing a bake sale and asked parents to bring in baked goods. I had red velvet cake on my mind because my friends and I were talking about a recipe floating around of a red velvet cheesecake...I couldn't stop thinking about it. I searched the internet looking for the perfect recipe. I had a red velvet recipe but it only tasted good smothered in frosting the cake itself needed help. I ended up combining a couple of recipes into one velvety goodness!! 

In a bowl combine sugar, buttermilk, oil, eggs, vinegar, cocoa, vanilla, baking soda, flour and food coloring. Mix until combined.

I like a full cupcake so I fill my cups up about 2/3 of the way full

Bake for 21 minutes at 350 degrees. The bottoms of the cupcake papers have oil so I always place the cupcakes on a paper towel to cool. I use a ziplock bag and cut the tip off to make make my frosting swirl

 Red Velvet Cupcakes
2 cups sugar
1 cup buttermilk
1 1/2 cup Oil
3 eggs
1 tbs vinegar
2 tbs cocoa
2 tea vanilla!!!
1-2 TBS red food coloring
1 tea baking soda
3 Cups Flour

Combine all ingredients in a bowl. Mix and fill cupcakes papers about 2/3 of the way full. Frost with Cream Cheese Frosting

Chocolate Macaroon Cupcakes

Sunday was my sons 3rd Birthday. I had every intention of making the cupcakes from scratch especially because the thought of a box cake mix makes me sick. After a late night with friends the night before I woke up Sunday and decided I really didn't feel like making cake at all so I grabbed a mix. What's ironic is by the time I was done messing with the cake mix I used as much time tweaking the mix as I would've just making one from scratch. Go figure...

I replaced the water that is called for in the mix with Buttermilk. I added flour, sugar, eggs, oil and cocoa
Since my son is only 3, I decided to make some mini cupcakes just for him. Bake mini cupcakes for 15 minutes and regular for about 21 minutes. While cupcakes are cooling I make my frosting and toast coconut

Cream your butter, cream cheese, vanilla, and powdered sugar. If you like a thicker frosting add more powder sugar. I think I have an unusual obsession with vanilla. I always up the vanilla if I add more sugar

I toast my coconut in the oven at 350 degrees for about 8-10 minutes until your coconut looks like this. Then I frost the cupcakes while the coconut cools.

As you know by my ghetto double boiler I'm not all fancy up in here. So to frost my cupcakes I use a gallon size ziplock bag  fill it up with frosting and cut a hole out. Haha Martha Stewart eat your heart out!
Dip your cupcake in the coconut. To finish it off I drizzle melted chocolate on the top. 
Now there are some crazies in my family who don't like coconut so for them I frosted the cupcakes like normal. I took my left over chocolate and drizzled it on wax paper and let it cool. Then I broke it up and stuck it on top of the cupcake

Cupcakes

1 Chocolate Caxe mix
1 1/4 cup Buttermilk
3 eggs
1/2 Cup oil
3 Tbs Cocoa
1 cup Flour
1 cup Sugar

Mix all together and bake at 350 degrees for 21-22 minutes for regular size cupcakes and 15 minutes for the minis

Cream Cheese Frosting

1 pkg Cream Cheese
1 Cube Butter
2 tea (at least) Vanilla
3-4 cups powder sugar

Cream together. Add more powder sugar if you want a thicker frosting.
