Oatmeal Muffins

I enjoy a good muffin.  This a simple muffin that I love to eat with a little bit of Strawberry Jam.  I will be posting my Jam recipe latter on this Summer when the Strawberries are in season.  
These are moist, freezable and make about 
30 muffins.
These remind me a little of a coffee cake. I do like to make this with a strudel.  The recipe is at the bottom of the post.  Add strudel to the top of batter before baking.  Leaving off the strudel of course saves a few calories. I am trying to diet again....

Combine the oats, sour cream, melted butter, eggs, vanilla and brown sugar.  Mix well.
Measure out the flour.  I like to add the baking powder, baking soda and salt  into the measuring cup and mix a little with a forkAdd to the wet ingredients.
Mix batter well.
Add batter to paper lined muffin pans.  Bake for 20-25 minutes at 375 degrees
Cool and serve

Oatmeal Muffins
2 cups Rolled oats
2 cups Sour Cream
2/3 cup melted butter
4 eggs beaten
2 cups brown sugar
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp Vanilla

Combine oats, sour cream, butter, eggs, brown sugar and vanilla.  Mix well.  Measure out the flour and add the baking powder, baking soda and salt to measuring cup. Mix with a fork and add to the wet ingredients.  Add batter to paper lined muffin pans. Fill batter 3/4 of the way full.  Makes about 30 muffins. Bake for 20-25 minutes at 375 degrees.  Cool and serve warm.

Strudel
1/2 cup flour
1/2 cup rolled oats (optional)
1/2 cup brown sugar
1/4 cup melted butter
Melt butter and add the flour and sugar.  Combine well and sprinkle on top of the muffins before baking

Buttermilk Pancakes


Growing up my mom always made pancakes from scratch. I never appreciated them. I loved going over to my friends houses and eating the crappy bisquick pancakes. My friends however loved her pancakes. Whenever they would spend the night they would request her pancakes I was always like...really? You WANT those? It wasn't until I went out to eat in Hawaii and I ordered pancakes that I appreciated how good these were. I could taste the bisquick. They were flavorless and tasted like cardboard and I was mad I was paying $10 for something that I make better. Never again will I order cardboard pancakes.


In a bowl combine all ingredients. If you don't have buttermilk you can use milk and add 1-2 tbs of vinegar to the milk. Let sit and curdle for about 5 minutes. This method will work but I never feel like it tastes the same.

Pour batter on a hot griddle or pan. When you see bubbles forming all over the pancake it's ready to flip

Serve with syrup or my favorite buttermilk syrup! It tastes like caramel and it's sooooo good!!

Buttermilk Pancakes

2 Cups Buttermilk
2 Cups Flour
1/4 cup melted butter
1 tea vanilla!!
1/4 cup Sugar
1 Tbs Vinegar
1 tea Baking Soda
1 tea Baking powder
1 Egg

Combine all ingredients in a bowl and mix until combined. Pour on a hot pan. When bubbles form all over pancake it's ready to flip

Buttermilk Syrup**RECIPE CHANGE**


Buttermilk syrup sounds so disgusting I know. Trust me it's like heaven. It tastes like caramel goodness all over your pancakes. I was playing games with some friends when my friend Marlene starts talking about her favorite syrup buttermilk syrup...of course I was intrigued and I went home and googled recipes. What I want to know is how someone decides one day to say "I know what will be good I'll make syrup out of this buttermilk" never would those thoughts cross my mind but it totally worked and I think you will be hooked when you try it.

In a saucepan add sugar, buttermilk, corn syrup and baking soda. The original recipe calls for white sugar. I wanted mine to have more of a caramel flavor so I used half brown sugar and half white. Make sure to use a large pot because of the baking soda this bubbles up like a volcano. **Here is my change. There is always something a little off putting about the syrup. The first bite is delicious but the after taste not a fan..I cut my baking soda down to 1/4 tea and it was fantastic with no off putting tastes

Bring to a boil and stir constantly for 8 minutes. This is the worst part I know but it will be worth it 


Remove from heat and add vanilla!! This is also good on ice cream!!

2 Tbs Corn Syrup
**1/4 tea Baking Soda
1 Tbs Vanilla!!

The Absolute BEST Scones



OK I am soooo excited about these scones. I have never really liked scones I always felt like they were just a glorified biscuit. So when my sister fell in love with a scone place in Utah and asked me to figure out how to make them (side note I have the ability to taste something and recreate it. It's a terrible ability and the reason I just can't get skinny!!!)  I wasn't all that excited since the only scone I had ever tried was the dry crumbly ones at starbucks. These scones were different. They were delicious and filled with different jellies. I tried and tried and made really good scones. My sister would tell me these are really really good....but I still prefer the ones in Utah...until today. I have finally won her over with these Orange glazed scones. She told me she prefers these over the scones in Utah!! They are fabulous and my husband told me I should sell them in a store they are that good and the best part is they are super easy to make!!!

In a bowl combine Flour, Baking powder, sugar and COLD butter cut into little squares.
Using the paddle attachment on your kitchenaid or pastry blender cut butter into flour until it is pea size
In a bowl beat eggs, orange zest and cream and add to flour mixture.

Mixture will be sticky. Do not overmix.

On a well floured surface roll out dough about 3/4" thick and cut out. 

Before I bought my fancy circle cutters  I used the mouth of a drinking glass. It works just fine. Brush tops with milk and sprinkle sugar 
Place on a greased cookie sheet and bake 15 minutes at 400 degrees

While scones are baking make your orange glaze. I used the cutties (small mandarin oranges) from Costco to make my glaze. I zested 2 cutties which was about 2 Tbs zest. Then I used the juice of the oranges about 3 TBS of juice. Combine with 3/4 C powder sugar, melted butter and very important VANILLA (my favorite) but seriously the vanilla really brings out the flavor.

Glaze and serve!! I think these are the best served warm. They are flaky and they literally melt in your mouth.  I am so excited for you all to try them. I want your feedback when you do!!

Orange Glazed Scones

2 Cups Flour
1 TBS Baking Powder
1 1/2 Cubes Cold Butter (3/4 cup)
2 TBS sugar
2 Tbs Orange Zest
1/2 Cup Heavy Cream
2 Eggs

In a bowl combine Flour, Baking Powder and sugar. Cut butter into squares and blend with a pastry blender until its pea size pieces. In a bowl beat eggs, cream and zest. Add to Flour mixture.  Mix until just combined. Do not over mix.. Roll out the dough about 3/4" thick on a well floured surface cut out and place on a greased cookie sheet. Bake at 400 degrees for 20 minutes. Makes about 14 scones

Orange Glaze

1-2 TBS Orange Zest
3 TBS Orange Juice
1 tea Vanilla
1 TBS melted Butter

Combine all ingredients in a bowl and add to scones
3/4 cup Powder Sugar

Baked Apple Pie Pancakes


Today for breakfast I decided to make some Apple Pie pancakes. During the fall I got a bazillion apples and I didn't know what to do with them all. My kids won't eat fruit so canned apple sauce was a big no. So I decided to can apple pie filling which I will remake and post in the future. It's so nice to be able to grab a jar when you need to make a quick dessert like apple crisp or put some on waffles or now apple pancakes.

Turn the oven on to 400 degrees and melt 2 tbs of butter in a 8x8 pan. 

When butter is melted open a can of apple pie filling and stick back in the oven while  you make your pancake mix.
 
In a blender blend 3 eggs, buttermilk (if you don't have buttermilk I have used milk with 1/2 tea vinegar) sugar and flour and blend
Pour onto apples and stick back in oven for about 20-25 minutes

This is what is looks like when it's done. You can see the filling bubbling through and it's got some golden brown edges.



Sprinkle with powder sugar. My husband and I both agree that we liked it better drizzled with maple syrup (not the real stuff although I do like that too) I bet this would be tasty with whipped cream or vanilla ice cream!!!

Baked Apple Pie Pancakes

2 TBS Butter
1 Can Apple Pie Filling
1/2 C Buttermilk
3 Eggs
1/2 tea Vanilla
1/4 Cup Sugar
1/2 tea Baking Soda
1/2 Cup Flour

Turn oven onto 400 degrees. Melt butter in a 8x8 pan. Dump Apple Pie Filling into pan and stick back in oven while you mix pancake mix. In a blender blend eggs, vanilla, buttermilk and sugar. Add Baking Soda and flour and blend for 60 more seconds. Pour onto apples and bake 20-25 minutes. Dust with powder sugar and serve

Mini Cinnamon Rolls

My friend decided to have a pre-new years eve party last night. Of course I signed up to bring a dessert. I started to think of what I wanted to bring and I thought about the cardboard like mini cinnamon rolls that Costco sells. While I will eat them if they are in my face, I much prefer a gooey homemade one. So I decided to shrink down my cinnamon rolls. This recipe is easy and they were delicious. I have another recipe that I will probably post in the future but this one works and tastes great!
Bread has long time been my nemesis. I never could get it to rise right. My water was either too hot or too cold and it just never worked. I have finally won my battle and have turned out some delicious bread (not according to my 5 year old who refuses to eat anything but store bought nasty bread) Anyway I turn my tap on as hot as it will get and put my hot water in a bowl. I sprinkle the yeast on the water and then I sprinkle my sugar on top of the yeast to sink it. I don't know that it actually does anything but I like watching them sink...easily entertained I guess!
Just to take back what I said up top I do know that the sugar helps to feed the yeast. I just meant that you don't have to sink the yeast with the sugar. Let your yeast sit for about 10-15 min until it looks all frothy like this...Oh shoot I just realized I didn't take a picture of me mixing all the ingredients into the yeast and mixing...Whoopsy! So like I said dump in your slightly beaten eggs, oil- Side note mom I'm talking to you don't use olive oil it gives it a nasty flavor. She tries to pretend that olive oil makes it a little more healthy... and flour and mix. I use a kitchenaid and use the bread hook. But you can knead your dough by hand. Kneading brings out the elasticity in the dough and it takes about 10 minutes of kneading. I  find that works well when you are particularly annoyed with people in your household (not that I am admitting to getting annoyed haha!) but seriously kneading dough can help get some frustration out!
Form your dough into a ball and place it in a greased bowl and let rise 1 hour until it has doubled in size.
I divided my dough into smaller balls and rolled out each one. It made about 6 smaller balls which ended up to be way too much work. So I gave half my dough away to my sister who fried it up and made angel wings. (basically fried bread dough and then dusted with powder sugar)
Spread butter, brown sugar and cinnamon over your rolled out dough. Roll the dough up as tightly as you can
I find that the easiest way to cut out the rolls is with dental floss. Make sure you use a unflavored floss otherwise your cinnamon rolls will have a hint of mint to them! Cris-Cross the floss like this and pull tight in opposite directions.
Don't they look cute? I actually wish I had made them smaller because they almost double in size when you bake them. You can let them rise again for an hour which I normally do but I wanted to keep these small. Throw them in the oven and bake for 20 minutes

Frost and serve!! P.S. Don't judge the hole in the middle. They looked so good I had to try one and then I remembered I needed to take a picture...

Mini Cinnamon rolls

3 cups water (hot about 110-115 degrees)
4 TBS Yeast
1 Cup Sugar
1 Cup Oil
3 slightly beaten eggs
8-11 cups of flour

Turn your tap water on to the hottest water or if you want to be all technical you can use a thermometer and make sure it is 110 degrees. Sprinkle yeast on water along with your sugar. Let sit about 10-min until nice and frothy. Add eggs and oil. Mix in your flour until the dough is not sticky enough to stick to your hands. Knead dough for 10 minutes and let rise for 1 hour. Roll out dough and spread butter and brown sugar mixture.

1 Cup Brown Sugar
1 Tbs Cinnamon
1 cube butter (don't judge)

Roll up the dough to form a snake. Cut out rolls using dental floss. Bake at 350 degrees for 20 minutes. Frost and serve

Frosting

1 pkg Cream Cheese
1/2 cube butter
1 tbs vanilla (you know me)
3 Cups Powder Sugar

Cream all together and spread

German Pancakes

This is a breakfast meal  my Mother made for us a lot.
My son Kyle loves them and 
has mastered the art of making them.
This is a very simple dish with very few ingredients.
Preheat the oven to 400 degrees. Place a 9 X 13 baking dish with 1/4 Cup of butter in it.
Combine the flour, milk and eggs in a blender.
Blend just long enough to incorporate the flour.
Pour into the baking dish and bake
Remove from oven and sprinkle with sugar or powdered sugar.
I like to serve with syrup or fresh fruit.
Slice into 6 pieces and serve hot!

1 cup milk
1 cup flour
6 eggs
1/4 cup butter 
( Butter can be cut down to 2 Tbsp)

Melt butter in the bottom of a glass 9 X13 pan.
Combine milk, flour and eggs in a blender and pour into baking dish
Bake at 400 degrees for 20 minutes
