Melt in your mouth Rolls!

As promised here is my homemade roll recipe!
I have several different recipes that I use for rolls.  This one is my favorite.

These rolls vanish quickly.  
I have made these in foil throw away cake pans 
and given them away as 
Teachers gifts with homemade Jam!  
It has always been a big hit.

Scald Milk in a saucepan and add Shortening to the saucepan  I try to only keep it warm enough to 
melt the Shortening.
Let that sit and start the Yeast!
in a bowl mix the sugar and the yeast together.  Add warm water and stir to dissolve.   
Let sit for 5 minutes.

In a mixing bowl add 4 cups of the flour and salt. 

Check the temperature of the milk mixture to make sure it is between 110 ~ 125 degrees.

Add Milk and yeast to the mixing bowl with the flour in it.  Let it combine and with a fork whisk the eggs and add to the mixing bowl.
Once this is combined add the remaining flour to the bowl a little at a time until it is combined and the dough should be pulling away from the edges of the bowl cleanly.  Knead until the dough is smooth about 8-10 minutes. 
 My Bosch does the kneading.... So I don't have to.  Shape into balls and place in a greased 9 X13 pan.  This recipe makes 2 pans.  
Cover with clear plastic wrap and place in a warm spot to allow rolls to rise.
 *This traps in the warmth of the rolls & retains the heat.
When the roll starts to reach the plastic wrap, remove and cover with a light towel.
Bake in 400 degree oven 12-15 minutes or until golden brown Makes 24-36 rolls  
It all depends on how big you make them!

2 cups milk
1/2 cup shortening
1/4 cup sugar
2 Tbsp Salt
1/2 cup lukewarm water (110 degrees)
7 cups flour
2 eggs (at room Temperature)
2 Tbsp yeast or 2 packages yeast

Scald milk in saucepan add shortening and melt.
Set aside and start the yeast.  Add yeast, sugar and warm water in a bowl and let set 5 minutes.  In a mixing bowl add 4 cups of flour and salt.  Add milk mixture (temperature should be between 110-125) and yeast mixture to the flour.  Combine and add whisked eggs. Add the remaining flour a little at a time. Turn dough out onto a floured surface and knead for 8 - 10 minutes.  Divide into balls and place in greased 9 X 13 pans.  Cover with plastic wrap and place in a warm location to rise.  remove plastic wrap when dough gets close to touching it.  Cover with a light towel until ready to bake.

Bake in 400 degree oven 12-15 minutes or until golden brown Makes 24-36 rolls  
It all depends on how big you make them!
