Pomegranate Salsa

This is a dish that we always have on our Thanksgiving table.  I always get requests to bring it to parties and events around the holidays.  We have been making this dish so long that we don't remember when it began!

Start by seeding the Pomegranates.  I like to place a dish towel on the counter to seed the pomegranates on.  This way I am not dropping the veins and white flesh into my bowl.  Note to the wise!
Pomegranate seeding is dangerous to clothing.
It stains!

Start by cutting the ends off the Pomegranate.  Score the fruit, but not too deep or
you will make your pomegranate bleed.....
Then start gently seeding.
Dice tomatoes, avocado and onion.
Add juice of 1 lemon.
Add spices.  Gently mix
Try not to destroy the avocado!
It is best to let it sit and let the juices come out.
But, we are never patient enough to wait!
Serve with Frito Scoops

P.S.. If you are trying to be healthy like I am these days (I say these days because we will see how long it lasts!!) You can add this salsa to a bed of spinach and use it for your dressing
